Three standard GN1/1 gastronorm pans sit directly on the granite slab. Temperature can be adjusted between 30 °C and 85 °C, suitable for cold holding or hot holding. Once set, the temperature remains stable, requiring minimal adjustment unless ambient conditions change. Pans can be swapped without reheating delays, as the granite retains heat for short interruptions.
The unit features a stainless-steel cabinet with a seamless granite top. The slab is enclosed within the frame, preventing debris from collecting in gaps. Controls are on the front panel: a rotary knob adjusts temperature, and an indicator light confirms power.

Cleaning involves wiping the granite slab and stainless-steel surfaces. After removing pans, the granite is cleaned with a damp cloth and mild detergent, avoiding abrasives. The stainless-steel frame and control panel are cleaned with a non-abrasive solution, focusing on seams to remove residue. The unit must be unplugged before cleaning.
