This granite surface maintains food at serving temperature using the natural heat retention of stone. The slab absorbs heat from embedded elements and distributes it evenly, providing steady warmth for dishes. Unlike metal, granite avoids hot spots, keeping sauces smooth and proteins tender. The consistent heat also warms delicate items like pastries or seafood gently without drying them out.
Place the granite slab on the base and connect it to a 230 V supply. Adjust the temperature between 30 °C and 85 °C using the control panel. Once heated, arrange GN1/1 gastronorm pans or plated dishes directly on the surface. The granite's mass keeps the temperature stable when pans are added or removed, allowing continuous service without delays. The two GN1/1 positions enable separate dishes to be warmed simultaneously.
The surface features natural Strzegom granite, selected for its durability and thermal properties. It rests on a stainless-steel frame with adjustable feet, ensuring stability on uneven floors. The 920 mm width and 735 mm depth suit standard kitchen worktops, while the 880 mm height aligns with most serving counters for comfortable use.
Controls include a temperature dial for the heating elements beneath the granite. The 1.6 kW power rating allows the slab to reach serving temperature quickly. The 230 V, 50 Hz voltage matches UK mains supply, requiring no special wiring in most professional kitchens.
The 30 °C to 85 °C range meets most holding and serving needs. The lower setting keeps cold desserts chilled or gently warms butter-based sauces, while the upper setting holds hot mains like stews or roasted vegetables. The granite's natural finish also offers an elegant backdrop for food presentation, suitable for front or back-of-house use.
Clean the granite surface with a damp cloth after each service, as the non-porous stone resists stains and odours. For deeper cleaning, use a mild detergent, avoiding abrasive pads to protect the surface. The stainless-steel frame can be wiped with standard kitchen sanitiser. The granite slab can be removed for thorough cleaning, though its weight requires two people to lift safely.
Designed for 2xGN1/1 gastronorm pans, this model fits standard catering sizes for mains, sides, and buffet items. The surface works with all GN1/1-compatible dishes, including metal, ceramic, and disposable trays.
This equipment falls under hot holding, used where food must remain at serving temperature for extended periods without further cooking.
