A hot granite surface provides a smooth, naturally heat-retaining worktop that keeps food at serving temperature without drying or scorching. The granite slab absorbs heat from embedded elements and radiates it evenly across its surface, allowing chefs to hold plated dishes, buffet items or pre-cooked components directly on the stone. This method avoids the hot spots of metal hobs and the uneven heating of water baths, giving consistent warmth without overcooking or cooling zones.
Below the granite top, a heated cupboard stores gastronorm trays at a controlled temperature. The cupboard uses a separate heating circuit to maintain a steady environment between +30 °C and +70 °C, keeping backup portions or mise en place warm without condensation or spoilage. The dual power ratings correspond to the granite surface and the cupboard, each drawing from its own 230 V supply.
To operate, the granite surface and cupboard are switched on independently. Once the granite reaches working temperature, dishes or trays are placed directly on the stone. The cupboard door is opened to load or retrieve GN1/1 trays, and the thermostat is set within the stated range to match the holding requirements of the food inside. The granite requires no additional utensils or water; the stone itself becomes the heat source.
The worktop is made of natural Strzegom granite, chosen for its density and thermal stability. The cupboard is constructed from stainless steel, with an insulated interior to retain heat. The overall unit measures 1465 mm wide, 735 mm deep and 880 mm high, providing a substantial work surface above a storage volume sized for standard gastronorm trays.
Controls consist of two independent on-off switches and a thermostat for the cupboard. The switches power the granite surface and the cupboard separately, while the thermostat adjusts the cupboard temperature within the +30 °C to +70 °C range.
The dual 230 V supply means the unit requires two separate circuits, each capable of handling the stated power draw. This arrangement allows the granite and cupboard to operate independently, so one can be used without the other. The granite's 2.0 kW rating reflects the load needed to heat the stone slab, while the cupboard's 5.6 kW rating accounts for the larger volume and higher temperature range it must maintain.
Cleaning involves wiping the granite surface with a damp cloth once it has cooled, avoiding abrasive pads that could scratch the stone. The cupboard interior is wiped down with a mild detergent solution, and the exterior stainless steel is cleaned with a non-scratch cleaner to maintain its finish. The granite should not be exposed to rapid temperature changes, so it is allowed to cool gradually before cleaning.
