A skimmer spoon lifts foam, fat and impurities from the surface of hot liquids while letting the liquid itself drain back through its perforated bowl. The perforations create a fine mesh that traps unwanted particles without removing the stock or sauce beneath, keeping the cooking process clean and the flavour intact.
To use the spoon, lower the bowl gently onto the surface of the simmering liquid. Move it slowly in a circular motion so the perforations skim the top layer. Lift the spoon when the bowl is full of foam or fat, letting the liquid drain through the holes. Repeat until the surface is clear, then hang the spoon by its curved handle to dry.
