A salmon knife is a long, flexible blade designed to glide along the backbone and ribs of a fish, separating flesh from bone in a single continuous cut. The thin, sharp edge minimises drag and prevents tearing, so each slice stays intact and the skin remains unbroken. This method preserves the texture and presentation of the fillet, which is essential for both raw and cooked preparations in professional kitchens.

To use the knife, place the fish on a stable cutting board. Start at the head end, insert the tip of the blade just under the skin, and draw the knife smoothly towards the tail, keeping the edge close to the bones. The flexibility of the blade follows the natural curve of the fish, so the operator can maintain a steady angle without forcing the cut. Once the fillet is free, turn the fish and repeat on the other side. The same blade can then portion the fillet into individual servings without crushing the flesh.

Cleaning follows from the materials: wash the blade by hand immediately after use, dry it thoroughly, and store it in a dry cupboard or knife block. The plastic handle resists moisture and detergents, but prolonged soaking can weaken the bond between the two plastics, so a quick rinse and wipe are sufficient.
