The knife relies on a rigid, tempered blade that resists bending under pressure. Hardness of 54-56 HRC ensures the edge holds its geometry through repeated sharpening, yet remains tough enough to avoid chipping when slicing dense ingredients. The blade's profile tapers gradually from spine to edge, concentrating force at the point of contact and reducing the effort needed for each cut.
The handle is moulded from two polymers: a firm core for structural strength and a softer outer layer for grip. This combination prevents the knife from twisting in the hand during rapid chopping or rocking motions. The handle's shape widens slightly at the front and back, giving the fingers and thumb positive purchase without requiring excessive grip force.
To use the knife, the operator holds the handle with the dominant hand, thumb and index finger pinching the blade's heel for control. Ingredients are placed on a stable cutting board; the knife is drawn through them with a smooth, even motion, letting the blade's length and weight do the work. After use, the blade is wiped clean and stored in a knife block or magnetic strip to protect the edge.
The blade is forged from a single piece of high-carbon stainless steel, standardised to 54-56 HRC hardness. The handle is injection-moulded in two materials: a rigid polyamide core and a thermoplastic elastomer outer layer for comfort and slip resistance.
The 30 cm length suits tasks that require long, uninterrupted cuts—portioning large joints, filleting whole fish, or slicing dense vegetables into even strips. The knife's weight and balance reduce wrist fatigue during extended service, while the hardness rating ensures the edge remains serviceable between sharpenings.
Cleaning is limited to hand-washing with mild detergent and immediate drying; the dual-plastic handle resists moisture absorption and staining. The blade should be honed regularly with a ceramic rod to maintain alignment and sharpened on a whetstone when the edge no longer bites cleanly.
