A butcher knife designed for clean, controlled cuts through meat and bone. The blade's hardened steel holds its edge through repeated use, allowing the operator to slice, portion and trim without frequent sharpening. The shape of the blade concentrates force on the cutting edge, so each stroke requires less effort and leaves a smoother surface on the meat.
The operator holds the knife by the handle, which combines two plastics for grip and comfort. One material forms the core for strength, the other the outer layer for a non-slip surface that stays secure even when wet or greasy. The balance point lies just ahead of the handle, so the weight of the blade does the work and the hand guides rather than pushes.
To use, the operator positions the blade on the meat, draws it forward or downward with steady pressure, and repeats until the cut is complete. The 18 cm length gives enough reach for larger joints while remaining short enough for detailed work around bones and cartilage.
The blade is hardened to 54-56 HRC, a range that resists chipping yet can still be sharpened in the kitchen. The entire knife is made in Italy to consistent standards, ensuring the same performance across every unit.
The handle's dual-plastic construction is dishwasher-safe, though hand-washing with warm water and detergent is recommended to preserve the blade's edge. Regular honing keeps the knife ready for service, and occasional professional sharpening restores the original angle when the edge dulls.
This model is a single 18 cm butcher knife, part of the Stalgast professional cutlery range for catering and butchery.
