A Santoku knife slices, chops and dices with a broad blade that curves only at the tip. The shape balances the knife in the hand and gives a flat cutting edge that contacts the board evenly. Food lifts cleanly from the surface, and the cook controls the stroke without rocking the blade.
The blade is forged from a single piece of steel and ground to a fine edge. Its hardness lets it hold that edge through repeated use, so the knife stays sharp longer between honing. The handle combines two plastics: a firm core for strength and a softer outer layer that cushions the grip. The shape fits any hand size, and the material does not slip when wet.
To use the knife, hold the handle firmly and guide the blade with the other hand cupped over the spine. Slice by drawing the blade forward and down in one motion, then lift and repeat. For chopping, raise the blade and bring it straight down, letting the weight of the knife do the work. The 16 cm length suits everyday tasks without overbalancing the hand.
The blade is made in Italy from high-carbon stainless steel. The handle is moulded in two plastics for durability and comfort. The knife is supplied without a sheath.
The 16 cm blade length is compact enough for detailed work yet long enough to handle larger ingredients. The hardness rating of 54-56 HRC ensures the edge stays sharp through frequent use, reducing the need for frequent sharpening.
Clean the knife by hand in warm soapy water, rinse and dry immediately. Do not soak or put it in a dishwasher. Store it in a knife block or on a magnetic strip to protect the edge.
