A colander holds food while liquid drains away through perforations in its bowl. Gravity pulls the liquid down, leaving solids behind, so the operator can rinse, wash or cool ingredients without carrying water along. The bowl's diameter and depth set how much food it can hold at once; the handles let the operator lift and tip it without touching the food or the worktop. To use the colander, the operator places it in a sink or over a container, loads the food into the bowl, and runs water over it or lets it stand until the liquid has drained. The two handles are positioned opposite each other, so the operator can grip both at once and lift the colander level, preventing spills. When the food is ready, the operator tips the colander to empty it onto a tray, a cutting board or straight into a cooking vessel. The bowl and handles are made of stainless steel, a material that resists corrosion from water and food acids. Stainless steel does not absorb flavours or odours, and it withstands the heat of hot water and steam without warping. The perforations are punched through the steel, leaving smooth edges that do not snag food or harbour dirt. Stainless steel lets you rinse the colander under running water and hang it to dry without worrying about rust or stains from acidic foods. Stainless steel can be washed in hot water with detergent, scrubbed with a brush or cloth, and dried in air or with a towel. The perforations are small enough to prevent food particles lodging in them, but a brush or a jet of water will dislodge any that do.
