Inox 18/0 stainless steel resists corrosion and staining, so the knife retains its finish through repeated washing and contact with acidic or salty foods. The absence of nickel in the alloy makes the steel slightly harder, which helps the edge hold its shape between sharpenings.
To use, the operator places the knife on the table with the blade facing the plate and the handle angled towards the diner. After service, the knife is collected and loaded into the cutlery basket of a commercial dishwasher, where the spray arms can reach every surface without the risk of snagging or bending.
