A ventilated pizza table keeps dough and toppings chilled while the granite worktop stays at room temperature for shaping and stretching bases. Cool air circulates inside the stainless-steel cabinet, drawn across the evaporator coil by a fan and then pushed through ducts behind the shelves. This steady flow maintains an even temperature across every tray guide, so each pizza base chills at the same rate and no hot spots form. The granite surface above the cabinet remains uncooled, giving a firm, stable area for rolling and topping without condensation or sticking.
Load the trays of prepared dough or topped pizzas onto the 21 guides inside the cabinet. Set the thermostat between +2 and +10 °C to match the recipe or storage time. The automatic defrost cycle runs at intervals, melting any ice on the coil without manual intervention. Self-closing doors seal the cabinet once released, reducing cold-air loss. Adjustable legs level the unit on uneven floors and raise the granite worktop to a comfortable working height.
The cabinet is constructed from stainless steel throughout, including the interior, exterior and door liners. A granite slab forms the worktop, providing a hard, non-porous surface that resists scratches and absorbs minimal moisture. The 21 tray guides are also stainless steel, spaced to accept standard 400 × 600 mm pizza trays. Two doors open the full width of the cabinet, each fitted with a self-closing mechanism and a handle.
A single thermostat controls the internal temperature, adjustable within the +2 to +10 °C range. Cleaning follows the stainless-steel and granite surfaces. Wipe the interior and guides with a damp cloth and mild detergent after removing the trays. The granite worktop can be sanitised with a food-safe cleaner. The automatic defrost system eliminates manual coil scraping, but the condensate tray beneath the coil should be emptied and cleaned weekly to prevent odours.
