A serve-over counter keeps chilled food visible and accessible while maintaining safe temperatures. The Virginia 1000 Standard uses a fan to draw warm air from the display area, passing it over a refrigerated coil. The coil removes heat, and the cooled air is recirculated evenly across the shelves, preventing hot spots and ensuring consistent chill from front to back. This ventilated cooling method allows the unit to hold products at the required temperature without freezing them, making it suitable for pastries, sandwiches and ready-to-eat dishes that must stay fresh but not icy.
The operator loads the three adjustable shelves through the rear sliding door, arranging products so they face the customer. LED lighting above and below the shelves illuminates the display, highlighting colours and textures. The electronic control unit is set to the desired temperature range of +2 to +6 °C; once programmed, the unit maintains that range automatically. Automatic defrosting and evaporation cycles clear frost from the coil without manual intervention, and the condensate is evaporated, eliminating the need for a drain.
The cabinet is constructed in stainless steel, chosen for its resistance to corrosion and ease of cleaning in a busy food environment. Double-tempered glass forms the curved front and sides, providing durability and clear visibility. The rear door slides open for restocking, reducing the space needed behind the unit and allowing it to be positioned closer to walls or other equipment.
