A paella pan spreads heat evenly across a wide, shallow base so that rice cooks at the same rate from edge to centre. The polished steel surface conducts heat quickly from the induction or glass-ceramic hob beneath, while the broad diameter allows the liquid to evaporate steadily, forming the characteristic socarrat layer at the bottom without scorching.
The operator places the pan directly on the induction or glass-ceramic hob, adds oil and ingredients in the sequence the recipe requires, and stirs or arranges them as the heat rises. No basket or rack is needed; the pan itself is the cooking vessel. Once the rice is done, the pan is lifted from the hob and served straight to the table or transferred to a serving dish.
Cold-laminated steel gives the pan a smooth, durable surface that resists warping under repeated heating and cooling. The polished finish reflects some of the radiant heat, helping to keep the temperature even across the base. The 360 mm diameter provides enough area to cook paella for a small to medium group without crowding the ingredients.
The pan is designed for induction and glass-ceramic hobs, which means it can be used on most modern professional worktops. Its weight and flat base keep it stable on the hob, reducing the risk of spills when stirring or moving the pan.
Cleaning is done by hand with warm water and a non-abrasive cloth or sponge. The polished surface should be dried immediately after washing to prevent water spots and maintain its appearance. No seasoning is required, but a light coating of oil after cleaning helps protect the steel between uses.
