A gas grill built for high-volume professional kitchens, the CASTA BroilyGrill BRL8001 generates intense radiant heat from two upper ceramic burners. These burners reach temperatures that sear meat, fish or vegetables quickly while locking in moisture, producing the characteristic char and smoky flavour of grilled food. The heat radiates downward, so the cooking surface itself does not need to be heated to the same extreme temperature, reducing flare-ups and making the grill safer to operate during long service periods.
The operator begins by sliding out the pull-out trolley and setting the cooking grids at the desired height—eight positions from 52 mm to 152 mm below the burners. This adjustment controls how close the food sits to the heat source, allowing everything from a gentle finish on delicate items to a fierce sear on thick steaks. Once the grids are locked in place, the burners are lit individually using battery-powered piezo ignition. Each burner has its own safety valve and thermocouple, so if the flame is accidentally extinguished, the gas supply shuts off automatically. A small pilot flame remains lit between cooking cycles, eliminating the need to relight the burners for each batch.
Food is placed directly on the stainless steel grids, which conduct heat evenly across their surface. As the food cooks, grease and juices drip into water pans at the bottom of the chamber, where they are cooled and contained, reducing smoke and flare-ups. Any solid residues fall into a tray mounted on guides beneath the grids; this tray can be removed together with the grids for quick cleaning between services.
The entire unit is constructed from AISI 304 stainless steel, chosen for its resistance to corrosion, high temperatures and repeated cleaning. The cooking grids, residue tray, water pans and pull-out trolley are all removable, and a drain at the bottom of the chamber allows liquids to be flushed away without dismantling the grill. The front and sides of the unit remain cool to the touch, protecting staff during operation.
The 12.8 kW gas input requires a dedicated commercial gas line, ensuring the grill can maintain its high temperatures throughout a busy service without losing performance. The footprint of 980 mm wide by 450 mm deep fits standard worktop configurations, while the 745 mm height allows the grill to be installed beneath extraction canopies without obstructing airflow.
Cleaning follows a straightforward sequence: the grids and residue tray are removed, the water pans are emptied, and the chamber is rinsed through the drain. The stainless steel surfaces wipe clean with minimal effort, and the ceramic burners can be brushed free of any carbon deposits without disassembly.
