An electric fryer heats a measured volume of oil to a controlled temperature, then lowers a basket of food into the oil so that the surface crisps while the interior cooks through. The oil transfers heat faster than air, so the food cooks in minutes without drying out. A large expansion area above the oil prevents spillage when the basket is lowered or removed, and a thermostat keeps the temperature steady so that every batch is consistent.
The operator fills the 17 litre tank with oil, closes the magnetic door and sets the thermostat. The orange pilot light shows the unit is live; the green light confirms the heating elements are energised. Once the oil reaches the set temperature the basket is loaded with food and lowered into the oil. After the timed cook the basket is lifted out, drained over the tank and the food transferred to a holding area. A chromate-brass tap at the base of the tank drains used oil through a stainless steel filter into a separate bowl for disposal or recycling.
The tank is pressed from a single sheet of 1.5 mm AISI 304 stainless steel, eliminating seams that could trap food debris. The top table is also pressed stainless steel, shaped into a wide, rounded bowl that catches any oil displaced when the basket is handled. High-performance sheathed resistors in stainless steel are mounted so they can be rotated out of the tank for cleaning. A high-precision electric thermostat controls the cooking temperature up to 190 °C, while a separate safety thermostat cuts power if the oil exceeds 230 °C. The thermostat bulbs sit inside the resistors, shielded from accidental knocks. Two indicator lights on the panel show power status and heating activity.
Adjustable stainless steel legs allow the unit to sit level on uneven floors, and a magnetic door keeps the interior clean when not in use. The 15.5 kW power rating requires a 400 V three-phase supply, the standard for professional kitchen equipment that draws heavy loads. The 54 kg weight means the fryer is moved on a trolley or with two people, and the 400 × 900 × 850 mm footprint fits on a standard worktop or counter.
Cleaning starts with draining the oil through the tap and filter. The resistors are rotated out of the tank so the interior can be wiped down without obstruction. The pressed stainless steel surfaces resist corrosion and are easy to sanitise, while the rounded expansion bowl prevents oil pooling on the top table. The chromate-brass tap and stainless steel filter are removed and cleaned separately to prevent clogging.
