The unit is designed for the efficient and fast cooking of various types of pasta – both fresh and dried. It is also suitable for cooking other products, making it a versatile solution for food service establishments.

A pasta cooker heats water in a stainless-steel tank by submerging electric elements directly beneath the false-bottom baskets. The water circulates around the pasta, transferring heat evenly without scorching, while the false bottom lifts the food clear of the hottest zone. Steam rises and is drawn away through a rear chimney, keeping the kitchen cooler and reducing condensation on surfaces.
To begin, the operator fills the tank via the internal taps, sets the thermostat between 50 °C and 100 °C, and switches on. Once the water reaches the chosen temperature, the basket is lowered into the tank. The pasta cooks while the operator monitors the indicator lights: one shows the unit is powered, the other confirms the elements are heating. When the pasta is ready, the basket is lifted onto the perforated draining rack at the front, where excess water and starch run into the overflow area. The double starch-draining system keeps the water cleaner for longer, reducing the need to change it between batches. After use, the tank is emptied through the front ball valve operated by a lever.
The worktop and cabinet are made from 1.2 mm AISI 304 stainless steel, while the tank itself is pressed in one piece from AISI 316 stainless steel with rounded corners for hygiene and easy cleaning. Adjustable stainless-steel legs allow the unit to be levelled on uneven floors. The control panel houses the thermostat and two indicator lights.
A 7 kW power rating means the cooker requires a three-phase 400 V supply, the standard circuit in professional kitchens for high-demand appliances. The 28 litre capacity allows large batches of pasta to be cooked simultaneously, while the 400 × 700 × 850 mm footprint fits on most worktops without overcrowding. The weight of the unit, combined with the adjustable legs, ensures stability during operation.
Cleaning involves emptying the tank via the front ball valve, wiping down the stainless-steel surfaces with a damp cloth, and removing any starch residue from the overflow area. The rounded corners of the tank and the smooth finish of the stainless steel reduce the risk of trapped food particles. The rear chimney should be checked periodically to ensure it remains clear of obstructions.
