Pastry fryers differ from standard fryers in several ways. Their wide cooking surface, shallow tank, and precise oil temperature control ensure even frying and prevent food from overlapping. They are ideal not only for traditional pastry products but also for preparing fish and vegetables.
An electric pastry fryer heats a large volume of oil to a precise temperature, allowing dough-based items to cook quickly and evenly while developing a crisp exterior. The oil transfers heat far faster than air, so pastries rise and brown in seconds without drying out. A built-in heating element sits beneath the oil, warming it from the bottom; the heat then spreads through convection, keeping the temperature uniform across the entire tank. Because oil retains heat well, the fryer recovers its set point almost instantly when cold dough is added, so each batch emerges with the same texture and colour.
To begin, the operator fills the 32 litre tank with fresh oil and sets the thermostatic valve to the required temperature. The piezo ignition system starts the heating element without an external flame or spark. Once the oil reaches the set point, the basket is lowered into the hot oil, submerging the pastries completely. The cold zone beneath the element traps any crumbs or debris that fall from the food, preventing them from burning and contaminating the oil. After the set frying time, the basket is lifted, allowing the oil to drain back into the tank while the pastries cool on a rack.
The tank is constructed from AISI 304 stainless steel, chosen for its resistance to corrosion and ease of cleaning. A chrome-plated frying basket with bakelite handles protects the operator from burns, and a matching chrome-plated oil filter removes suspended particles to extend oil life. An oil drain cock fitted with an extension pipe allows spent oil to be removed safely without spills.
The 12.0/18.0 kW power rating means the fryer requires a three-phase 380/415 V 50/60 Hz supply, the standard circuit in professional kitchens. The 1050 mm width, 650 mm depth and 290 mm height give a compact footprint that fits beneath a standard worktop or on a mobile stand, leaving space for preparation alongside.
Cleaning follows the parts named: the stainless-steel tank is wiped down after each service, the cold zone is emptied of crumbs, the oil filter is rinsed, and the drain cock is flushed to prevent blockages. The chrome basket and handles are washed separately to keep them free of baked-on residue.
