Pastry fryers differ from standard fryers in several ways. Their wide cooking surface, shallow tank, and precise oil temperature control ensure even frying and prevent food from overlapping. They are ideal not only for traditional pastry products but also for preparing fish and vegetables.
Electric fryer with outside elements
An electric pastry fryer heats a measured volume of oil to a controlled temperature, allowing dough-based items to cook quickly and evenly while developing a crisp outer layer. The heating element sits below the oil, transferring energy directly into the liquid. A thermostat monitors the temperature and cycles the element on and off to hold the set point, preventing scorching and ensuring every batch emerges with the same colour and texture. The fryer's tank is shaped to create a cooler zone at the bottom where food particles settle instead of burning, which keeps the oil cleaner and extends its usable life.
To begin frying, the operator fills the tank with fresh oil to the marked level, then switches the unit on and sets the desired temperature on the thermostatic control. Once the oil reaches the target, a signal light confirms it is ready. The chrome-plated basket is loaded with pastries or other items, lowered gently into the hot oil, and left to cook for the required time. When the batch is done, the basket is lifted out, drained briefly over the tank, and the contents are transferred to a cooling rack or serving tray. After each session the oil is filtered through the supplied chrome-plated strainer to remove crumbs, and the cold zone is cleared of any settled debris. When the oil needs replacing, the drain cock with its extension pipe directs the used oil into a container without spillage.
The tank and outer casing are constructed from AISI 304 stainless steel, chosen for its corrosion resistance and ease of cleaning. The frying basket and oil filter are chrome-plated for durability and hygiene. Bakelite handles on the basket remain cool to the touch, reducing the risk of burns during handling. A battery-powered piezo ignition system provides a safe, match-free start for the heating element.
A 4.5 kW power rating indicates the load the fryer places on the electrical supply; it requires a three-phase 380/415 V circuit capable of delivering that current continuously. The 5 L capacity determines the maximum volume of oil the tank can hold, which in turn sets the largest batch size that can be fried at once. Cleaning involves wiping down the stainless-steel surfaces with a damp cloth and mild detergent after each use. The piezo ignition system requires no maintenance beyond occasional battery replacement.
