A professional electric fryer designed for high-volume frying, the CASTA Lady 900 L9/FRE2V21 heats cooking oil in two separate 21 litre vats, allowing simultaneous preparation of different foods without flavour transfer. Electric elements immersed in the oil transfer heat directly, raising the temperature quickly and maintaining it evenly across the entire volume. This method ensures consistent frying results, with food cooked uniformly on all sides as it is submerged in the hot oil. The fryer's design prevents cold spots, which can lead to uneven cooking or excessive oil absorption, by circulating the oil naturally as it heats and as baskets are lowered and raised.
To operate, the user fills each vat with the required amount of oil, ensuring it covers the heating elements. The fryer is then switched on, and the thermostat is set to the desired frying temperature. A high-precision electric thermostat regulates the heating elements, maintaining the oil at the set temperature, while a safety thermostat cuts power if the oil exceeds a critical threshold. Once the oil reaches the correct temperature, the green indicator light confirms the heating elements are active. The operator lowers the baskets into the oil, monitoring the cooking process until the food is golden and crisp. After use, the oil can be drained through a chromate-brass tap into a steel bowl fitted with a stainless steel filter, simplifying cleaning and oil replacement.
Constructed from AISI 304 stainless steel, the fryer features a 1.5 mm thick tank pressed in a single piece to eliminate seams and weak points. The top work surface includes a large, rounded bowl to contain oil expansion during cooking, preventing spills when baskets are handled. High-performance stainless steel sheathed resistors are mounted on a rotating device, allowing them to be lifted for thorough cleaning of the tank interior. The control panel includes two indicator lights: an orange light showing the fryer is powered, and a green light confirming the heating elements are active. A magnetic-closing door provides access to internal components, while adjustable legs ensure stability on uneven floors.
The 40 kW power rating requires a 400 V three-phase electrical supply, suitable for commercial kitchens with high-capacity circuits. The 123 kg weight indicates a sturdy, fixed installation rather than a portable unit, while the 800 x 900 x 850 mm footprint demands dedicated floor space in a professional kitchen. The twin 21 litre vats allow separate frying of different items, such as fish and chips, without cross-contamination, doubling throughput compared to single-vat models.
Cleaning involves draining the oil, lifting the heating elements to scrub the tank interior, and wiping down the stainless steel surfaces. The oil-draining tap and filter simplify oil changes, while the seamless tank design prevents food debris from accumulating in crevices. The fryer's construction materials—stainless steel and chromate-brass—resist corrosion and withstand frequent cleaning with commercial detergents.
