The CASTA Gas pasta cooker, model LQ/CPG2V80, is designed for professional catering. This appliance features two independent cooking tanks, each with a 40 L capacity, allowing for simultaneous preparation of different pasta types or batches.
This type of pasta cooker operates by heating water in dedicated tanks using gas burners. The burners are positioned directly beneath the tanks to efficiently transfer heat. Operators fill the tanks with water, bring it to a boil, and then add pasta using baskets. The cooking process is managed by monitoring the water temperature and cooking times. Excess starch and water are managed through specific drainage and overflow systems built into the unit.
To prepare pasta, the operator would first connect the unit to a multigas supply. Water is supplied and topped up via taps located on the control panel. Once the water reaches the desired temperature, pasta can be added using baskets (not included). The heating is controlled via a multifunction valve. The system includes a pilot flame, thermocouple, and piezoelectric ignition for starting the burners. After cooking, the pasta can be drained using the integrated drainage system, which features a ball valve and a lever. The front of the unit has an overflow and starch drainage area with a perforated shelf to assist with managing water and starch.
The construction of the cooker utilises AISI 304 stainless steel for the main body and worktop, which has a Scotch Brite finish and a thickness of 2.0 mm. The cooking tanks themselves are made from AISI 316 stainless steel, known for its resistance in high-temperature water environments. The tanks have rounded corners for ease of cleaning and include a false bottom. The unit is fitted with adjustable legs made from AISI 304 stainless steel for stability on uneven floors.
Control is managed through a multifunction valve. The unit is certified according to EC standards.
