Wok cooking
Burners :3
On open stand with lower shelf and closed on three sides.
A gas-powered wok cooking station built for high-output oriental cuisine, where vertical flame burners deliver even, rapid heat across the pan. The flame rises directly against the curved base, transferring energy without hot spots so stir-fries, deep-fries and braises finish at the same moment. Burners are selected from three cast-iron atmospheric models—9.5 kW, 14 kW or 21 kW—each fitted with a safety valve tap, pilot flame and thermocouple to shut off gas if the flame fails. Every burner lifts out for cleaning and maintenance without tools.
The unit is a wall-mounted model, freeing the worktop for other equipment. A 2.5 mm thick stainless steel top, reinforced for strength, stays flat under heavy woks. Under each burner sits a removable drip-pan that catches spills and splashes, keeping the area beneath clean. Wok support rings in black enamelled cast iron fit the chosen burner size, holding the pan steady at the correct height above the flame. Matching round grills, also in black enamelled cast iron, clip into place when grilling or searing is needed instead of wok cooking.
Operation follows a simple sequence: light the pilot, open the gas tap, adjust the flame with the control knob, and set the wok or grill on its ring. The vertical flame heats the pan uniformly, so food cooks through without scorching. Once finished, turn off the tap, lift out the burner for cleaning, and remove the drip-pan to empty and wash.
Construction is entirely in AISI 304 18/10 stainless steel, including the adjustable legs that level the unit on uneven floors. The unit carries CE conformity certification, confirming it meets European safety standards for gas appliances. Because the station is made to order, both the overall dimensions and the arrangement of burners are chosen by the client, allowing the layout to match the kitchen workflow and menu requirements.
The 1000 mm width and depth create a compact footprint that fits against a wall or between other equipment, while the 850 mm height keeps the cooking surface at a comfortable working level. The gas-powered design avoids electrical load and allows instant adjustment of heat, essential for the quick changes of wok cooking. Cleaning is straightforward: wipe down the stainless steel surfaces, lift out the burners, empty and wash the drip-pans, and brush the cast-iron rings and grills to remove carbonised residue.
