A gas stove built for wok cooking concentrates intense heat directly beneath the curved base of the pan, allowing rapid searing and stir-frying at temperatures that flat-top ranges cannot reach. The burner fires vertically through a cast-iron ring, creating a focused column of flame that transfers energy efficiently into the wok without wasting heat around the sides. This method keeps the cooking surface hot enough to caramelise ingredients in seconds while preventing the oil from cooling, so each addition of food maintains the wok's working temperature.
The sequence begins by placing the wok on the support ring or round grid, depending on the pan in use. The operator opens the gas valve, then uses the manual ignition knob to light the pilot. Once the flame is established, the main control knob adjusts the gas flow, regulating the height of the vertical flame and thus the heat delivered to the wok. During cooking, the flame remains visible through the clear cast-iron ring, allowing the chef to monitor its intensity. After use, the burner and ring lift away for cleaning, and the drip tray beneath collects any overflow, keeping the worktop free of grease.
The entire unit is constructed from AISI 304 18/10 stainless steel with a Scotch Brite finish, chosen for its resistance to corrosion and ease of cleaning under heavy kitchen use. The cooking surface is reinforced to 2.0 mm thickness, ensuring it withstands the repeated thermal shocks of wok cooking without warping. Cast iron burners and support rings retain heat well and distribute it evenly, while the adjustable stainless-steel legs allow the stove to be levelled on uneven floors or matched to the height of adjacent work surfaces.
Controls consist of a manual ignition knob and a gas flow regulator. The ignition knob opens the pilot valve, and the regulator adjusts the main burner's output, giving precise control over the flame's intensity. Safety features include a flame failure device, a protected thermocouple, and a safety valve that cuts the gas supply if the flame extinguishes unexpectedly.
A 14 kW power rating indicates the load the stove places on the gas supply; in a professional kitchen this typically requires a dedicated gas line capable of delivering the necessary flow without pressure drop. The 400 mm depth, 700 mm width and 275 mm height define the footprint on the worktop, allowing it to fit between standard kitchen modules or under extractor canopies.
