A gas wok stove built for the intense heat and rapid cooking that define wok techniques. The unit channels a powerful vertical flame through a cast iron atmospheric burner, concentrating heat where the rounded base of a wok sits. This direct transfer of energy keeps the pan at the high, even temperature needed for stir-frying, searing and flash-frying without hot spots or heat loss to the surrounding air. The burner's open design also allows quick visual checks of flame strength and distribution, so the chef can adjust gas flow on the fly to match the demands of each dish.
The sequence begins by positioning the wok on the chosen support: either a round cast-iron grate for traditional pans or a built-in wok ring that cradles the curved base. Once the pan is stable, the manual ignition knob is turned to light the pilot, then pressed to open the main gas valve. The vertical flame immediately envelops the lower third of the wok, heating it within seconds. Food is added, stirred or tossed continuously, and removed when the desired texture and colour are reached. After cooking, the burner is shut off with the same knob, and the flame failure protection cuts the gas supply automatically if the flame goes out.
Construction centres on a 2 mm reinforced AISI 304 18/10 stainless-steel top and body, finished in Scotch Brite for a satin sheen that resists fingerprints and corrosion. The cast-iron burner and grates are black enamelled to withstand repeated thermal cycling without warping or scaling. Removable drip trays sit beneath the burner to catch fats and liquids, preventing flare-ups and simplifying daily cleaning. Handles and control knobs are clad in heat-resistant composite with a cool-grip surface, so they remain safe to touch even when the stove is running at full power. Four adjustable stainless-steel legs allow the unit to be levelled on uneven floors or raised to match adjacent worktops.
The 14 kW gas rating draws a steady load that must be supplied by a dedicated commercial gas line, ensuring the burner can sustain the high output needed for wok cooking without pressure drop. At 400 mm deep, 700 mm wide and 850 mm high, the stove fits into a standard worktop run while leaving enough clearance for the wok's flared sides. The 46 kg weight keeps the unit stable during vigorous stirring but still allows two people to move it for deep cleaning or kitchen reorganisation.
Cleaning follows from the removable parts: the burner, grates and drip trays lift out for scrubbing in a sink or soak tank, while the stainless-steel surfaces can be wiped down with a damp cloth and mild detergent. The cool-grip handles and knobs are cleaned the same way, avoiding abrasives that could damage the heat-resistant coating. Regular checks of the flame failure protection and thermocouple are recommended to maintain safety compliance.
