A Japanese gas plate delivers concentrated, even heat across a solid cooking surface, designed for precise temperature control and rapid response. Gas burners beneath the plate heat the chromium-plated steel, which conducts heat efficiently while radiating minimal warmth into the kitchen. The three flame tubes under each burner distribute heat evenly, eliminating cold spots and allowing consistent cooking across the entire surface. Thermostat-controlled taps regulate the gas flow, adjusting the temperature from low simmer to high sear without manual flame adjustment, while sensors mounted directly on the plate ensure the set temperature is maintained accurately.
To operate, the pilot light is ignited using the piezoelectric starter, then the thermostat knobs are set to the required temperature between 0 and 280 °C. The chromium plate heats quickly, and the perimeter groove collects cooking residues, directing them to a single drain hole and into a removable tray for easy cleaning. Adjustable stainless steel legs allow the unit to be levelled on uneven floors, while the rear shelf provides additional workspace or storage for utensils and ingredients.
The entire unit is constructed from AISI 304 18/10 stainless steel, including the 15 mm thick chromium-plated cooking plate, which resists warping and simplifies cleaning. The high thermal conductivity of the chromium surface reduces energy waste, as heat is directed into the food rather than lost to the surrounding air. Heat-resistant knobs protect against accidental burns, and the adjustable legs ensure stability on any worktop.
Each of the three burners delivers 5.8 kW, combining to a total gas load of 17.4 kW, suitable for a dedicated commercial gas supply. The 1200 mm width provides ample cooking space for multiple dishes simultaneously, while the 700–760 mm depth allows integration into standard kitchen layouts. The 850 mm height positions the cooking surface at a comfortable working level for standing chefs.
Cleaning involves wiping the chromium plate after use to remove residues, which collect in the perimeter groove and drain into the tray. The stainless steel construction resists corrosion and staining, and the removable tray simplifies daily maintenance. The chromium surface requires no seasoning and resists sticking, reducing the need for abrasive cleaning tools.
