This professional pasta cooker features two separate tanks for boiling water, enabling simultaneous preparation of different foods without mixing flavours. Hot water circulates around submerged baskets, delivering uniform cooking results. A rear chimney vents steam, avoiding pressure build-up and ensuring a safe workspace. Perforated baskets hold food below the water while allowing starch to escape, reducing water contamination during use.
To begin, fill each tank through the front filler controlled from the panel. Adjust the thermostat between 50 °C and 100 °C to suit the food being cooked. A warning light shows when heating elements are on, and a general light confirms power. Place food in the baskets, lower them into the tanks, and time the cooking. After cooking, lift the baskets onto the front drainage shelf to remove excess water before serving.
The body and working top are made of AISI 304 stainless steel with a 2 mm scotch-brite finish for durability. The tanks use AISI 316 stainless steel, resistant to corrosion with rounded corners for hygiene. A front overspill area with double drainage captures starch and water, channelling it to a drain outlet through a stainless steel line operated by a ball valve. Adjustable legs allow levelling on uneven surfaces, while heat-resistant handles and knobs remain safe to touch.
A 14 kW power rating requires a 400 V 3-phase electrical connection. The unit weighs 70 kg, providing stability but may need two people for positioning. The dimensions of 800x700x850 mm suit standard worktop layouts, with rear space needed for the chimney. Two 28 L tanks allow batch cooking for medium to large service volumes.
Cleaning involves draining each tank via the ball valve, scrubbing the interiors to remove starch, and wiping the scotch-brite surfaces. The drainage shelf and baskets need regular brushing to prevent blockages. The thermostat and heating elements require only visual checks for scale or corrosion.
