Each tank heats oil independently, allowing simultaneous frying of different foods at separate temperatures or a continuous service cycle where one basket is lowered as another is lifted. The oil is heated by submerged stainless steel elements that transfer energy directly into the fat, raising its temperature quickly and evenly. Because the elements are sheathed and mounted on a rotating mechanism, they can be swung clear of the tank for thorough cleaning without draining the oil, reducing downtime and oil waste.
To begin frying, the operator fills each tank with oil to the marked level, closes the lid to reduce heat loss and splashing, then sets the desired temperature on the electric thermostat. The orange indicator light confirms the unit is powered; the green light shows the elements are heating. Once the oil reaches the set temperature—up to 190 °C—the thermostat cycles the elements on and off to maintain it. A separate safety thermostat monitors the oil and cuts power automatically if the temperature exceeds 230 °C, preventing fire and oil breakdown. The operator lowers the basket into the hot oil, and the food cooks through rapid heat transfer from the oil, creating a crisp exterior while sealing moisture inside.
