Oven GN 2/1 685x530x350 mm
A gas stove built for continuous service in professional kitchens, combining six open burners with a static gas oven beneath a single stainless-steel worktop. The burners draw natural gas through individual taps, each fitted with a flame-failure device that cuts the supply if the flame is extinguished. A protected thermocouple and pilot light ensure the safety valve remains open only while the burner is alight. Manual ignition is provided by a piezoelectric spark, eliminating the need for external lighters or matches.
The principle of open gas burners is direct radiant and convective heat transfer. Gas is mixed with air at the burner head, producing a visible flame that heats the base of pots and pans. The double-crowned burners create a broad, even heat pattern, while the single-crowned burners concentrate heat for smaller vessels. The oven beneath operates on a static principle: a single burner at the base heats the chamber, and natural convection circulates the air without a fan. This method gives steady, gentle heat suitable for roasting and baking, with the temperature controlled by a thermostatic knob offering eight fixed positions.
To use the stove, the operator first ensures the gas supply is open and the taps are closed. Each burner is lit by pressing the corresponding tap, which releases gas and generates a spark. The flame is adjusted by turning the tap to the desired intensity. Drip pans beneath the burners collect spills, and the patented design with a 95 mm depth prevents overflow. The oven is preheated by setting the thermostat to the required temperature and lighting the burner with the piezoelectric ignition. Once the oven reaches the set temperature, the pilot light remains on to maintain heat. The oven door, fitted with a heat-resistant gasket, seals the chamber to retain heat and protect the outer surface.
The entire unit is constructed from AISI 304 18/10 stainless steel, including the moulded worktop with a raised rim to contain spills. The worktop is 2.0 mm thick and finished with a scotch-brite texture for durability and ease of cleaning. Burners are made of bright porcelain cast iron, resistant to acid and stabilised to maintain flame consistency. The oven chamber is lined with porcelain enamel steel or AISI 430 stainless steel, chosen for its resistance to high temperatures and ease of cleaning. The oven sole is a thick cast iron plate, split into two sections for easier removal and maintenance, with an inspection hatch for access to the pilot light and burner.
Controls include individual gas taps for each burner, each with a flame-failure device and manual ignition. The oven thermostat offers eight temperature settings between 110 °C and 320 °C, controlled by a single knob. The unit stands on adjustable stainless-steel legs, allowing the stove to be levelled on uneven floors.
The power ratings of the burners—3.5 kW, 5.5 kW and 7.4 kW—determine the heat output available for different cooking tasks. The 200 kg weight indicates a robust construction designed for stability and durability in a commercial environment. The 1200 mm width provides space for six burners and a full-width oven beneath, making it suitable for medium to large kitchens where multiple dishes are prepared simultaneously. The static oven, with a useful height of 340 mm, accommodates standard gastronorm trays and baking sheets.
Cleaning involves removing the drip pans and burner grids for washing, while the oven chamber and sole can be wiped down after each use. The split cast iron sole simplifies deep cleaning, and the inspection hatch allows for periodic checks of the oven burner and pilot light. The stainless-steel surfaces are resistant to corrosion and staining, requiring only regular wiping with a damp cloth and mild detergent.
The stove is certified to EC standards, ensuring compliance with safety and performance regulations for commercial gas appliances.
The catalogue places this model in the professional cooking equipment section, under gas stoves with static ovens.
