A solid top gas range heats a thick steel plate with gas burners beneath it, spreading heat evenly across the surface for consistent cooking. The burners fire into a sealed chamber under the plate, raising its temperature so that pots and pans placed directly on it receive steady, radiant heat without hot spots. This method suits long, slow cooking and holding dishes at temperature, while the open burners around the plate give instant, adjustable flames for faster work like boiling or searing.
The CASTA Lady 900 L9/TPG6LE combines the solid top with three open gas burners and an electric oven. The operator lights the burners with piezo-electric ignition, sets the flame with gas taps, and places pots on the burners or directly on the solid plate. The oven is switched on separately, its thermostat set between 100 °C and 300 °C to bake, roast or hold food. Drip pans under the burners catch spills, and a removable central section under the solid plate allows access for cleaning.
The entire unit is built from AISI 304 stainless steel finished in scotch brite, including the 2 mm thick moulded top surface with a raised rim to contain overflow. The burners are bright porcelain cast iron with stabilised flames, and the open burners are fitted with a black enamel cast-iron grid. Two of the burners share a printed stainless-steel drip pan 95 mm deep; the third has its own pan. The oven chamber is stainless steel with two sheathed resistors—upper and lower—each rated at 2740 W on a 400 V three-phase supply. The oven door has a heat-resistant handle and a replaceable gasket.
The gas input is split across three burners rated at 5.5 kW, 7.4 kW and 12 kW, plus an atmospheric burner under the solid plate. The oven draws 5.48 kW on a 400 V three-phase circuit, so it requires a dedicated supply in a professional kitchen. The unit measures 1200 mm wide, 900 mm deep and 850 mm high, taking a standard worktop footprint while leaving space for adjacent equipment. The 12 mm thick mild-steel plate under the solid top can be lifted out for thorough cleaning, and the adjustable legs allow the range to sit level on uneven floors.
Cleaning involves removing the drip pans, lifting out the central section under the solid plate, and wiping down the stainless-steel surfaces. The oven chamber and door gasket should be cleaned after each use to prevent grease build-up. The printed drip pans and the removable central section are designed to simplify this routine, while the rounded edges and moulded top reduce areas where dirt can collect.
