A solid top gas range combines a heavy steel plate that radiates heat evenly across its surface with an under-plate atmospheric burner. The steel plate absorbs the flame and spreads the heat without hot spots, so pots and pans sit level and cook steadily. The central section lifts out for cleaning, leaving the burner and flue chimney accessible. Below, an electric oven circulates heat from upper and lower sheathed resistors, giving even baking and roasting without a fan.
The sequence starts by lighting the gas: the piezo-electric ignition sparks when the tap is turned, and the flame failure device cuts the gas if the flame goes out. The open burner tap controls the size of the flame under the plate. On the oven, a thermostat sets the temperature between 100 °C and 300 °C, and the two resistors cycle on and off to hold it. The oven door has a heat-resistant handle and a gasket that seals the chamber, keeping the heat inside.
The range is built entirely of AISI 304 stainless steel with a scotch-brite finish. The work surface is 2.0 mm thick, rounded at the edges, and houses a flue chimney. The solid top is a 12.0 mm mild steel plate with a removable central section. The oven chamber, sole, door and inner door are all stainless steel, and the legs adjust for levelling on uneven floors.
The gas burner is rated at 12.0 kW, which determines the size of the gas pipe and regulator needed in the kitchen. The electric oven draws 5.48 kW from a 400 V three-phase supply, so it requires its own circuit and a compatible plug. The 152 kg weight means the unit is moved with a pallet truck or trolley, and the 800 mm width fits standard worktop runs while leaving 100 mm for clearance at the sides.
Cleaning involves lifting out the central steel section to reach the burner and flue. The oven chamber and sole wipe down with a damp cloth, and the door gasket is checked for wear. The adjustable legs are set once and rarely moved, but they can be raised or lowered if the floor is uneven.
The range is certified to EC standards for gas and electrical safety in professional kitchens.
