A solid top gas range combines a heated metal plate with open burners to give a kitchen two cooking surfaces in one footprint. The thick steel plate absorbs heat from an under-plate burner and spreads it evenly across the surface, so pots and pans sit on a continuous hot zone instead of over individual flames. This lets chefs move pans without losing contact with the heat, sear large items evenly, and keep dishes warm without scorching. The open burners alongside run at higher temperatures for fast boiling, frying and sautéing, while the static gas oven below bakes and roasts with dry, steady heat.
The sequence starts by lighting the under-plate burner with the piezo-electric ignition; the flame heats the 12 mm mild-steel plate until the surface reaches working temperature. Chefs then place pans on the solid top or over the open burners, adjusting the gas taps to control the heat. The oven is set separately using the thermostatic knob, which offers eight positions between 120 °C and 300 °C. When cooking is finished, the gas is turned off and the surfaces are left to cool before cleaning.
The entire unit is built from AISI 304 stainless steel finished in scotch brite, including the moulded 2 mm top surface printed with a relief pattern to guide spills into removable drip pans. The burners are bright porcelain cast iron with acid-resistant coatings and stabilised flames: a double-crowned 7.4 kW burner, a single-crowned 5.5 kW burner and a 3.5 kW burner. A black-enamel cast-iron grid supports pans over the burners, while two printed stainless-steel drip pans collect overflow from the larger burners. The work surface is rounded and seamless, with a flue chimney at the rear. The under-plate burner is atmospheric, rated at 12 kW, and uses a protected thermocouple for safety. The static gas oven has a stainless-steel chamber, a thick AISI 430 sole split into two parts for easier maintenance, and a double-walled door with a heat-resistant gasket. All handles and knobs are cool-grip and made from heat-resistant material, and the legs are adjustable for levelling on uneven floors.
The gas connection is split into three circuits: one 5.5 kW, one 7.4 kW and one 12 kW, plus the 7.9 kW oven burner. This requires a commercial gas supply capable of delivering the combined load and separate taps for each circuit. The 1200 mm width fits standard worktop runs, while the 900 mm depth leaves room for rear clearance and extraction. The 850 mm height places the solid top at a comfortable working level for standing chefs. The 2 mm stainless-steel top and 12 mm mild-steel plate give the unit enough mass to retain heat during service, reducing temperature swings when pans are added or removed.
Cleaning follows the construction: the 2 mm stainless-steel top can be wiped down with standard kitchen cleaners, while the printed relief pattern helps lift spills into the drip pans. The drip pans themselves are removable and dishwasher-safe. The oven sole is split, so each half can be lifted out for thorough cleaning or inspection of the pilot light and burner. The cast-iron burners and grid can be scrubbed with a wire brush to remove carbon deposits, and the enamel coating resists acid and corrosion. The oven door gasket should be checked regularly for wear and replaced if it no longer seals tightly.
