A gas fryer heats cooking oil by burning gas in tubular burners beneath the tank. The heat rises through the oil, raising its temperature evenly so food cooks quickly and develops a crisp exterior while staying moist inside. External heat exchangers improve this process by separating the combustion chamber from the oil, which keeps the tank cleaner and makes it easier to maintain the correct temperature. The oil circulates around the food, transferring heat without direct flame contact, which prevents hot spots and ensures consistent results across every batch.
To operate the fryer, the operator fills each 21 L tank with oil and sets the working thermostat to the desired temperature. The gas valve system ignites the burners, and the oil heats until it reaches the set point. Once the oil is ready, the operator lowers the stainless steel baskets filled with food into the tanks, where they cook until golden. The lid can be closed to retain heat and reduce energy use. After frying, the baskets are lifted out, and any food debris settles in the wide bottom zone of the tank, where it can be drained through the chromed brass tap into the stainless steel oil receptacle. The oil passes through a filter in the receptacle, allowing it to be reused for the next batch.
The fryer is built from AISI 304 stainless steel, a corrosion-resistant material that withstands the demands of a professional kitchen. The frying tanks have rounded edges to promote even oil circulation and simplify cleaning. Surfaces in contact with the combustion chamber are coated with vulcanized silicone paint, protecting them from high temperatures and extending their lifespan. Below the tanks, steel tubular multi-gas burners distribute heat uniformly, controlled by an electrically actuated gas valve system that ensures precise temperature regulation. External heat exchangers further improve efficiency and make the unit easier to clean.
Two thermostats control the fryer's temperature: a working thermostat maintains the oil at the set temperature, while a safety thermostat cuts off the gas supply if the oil exceeds 235 °C. Both sensors are located inside the tank and are protected from damage. Thermal insulation between the combustion chamber and the outer casing reduces heat loss, helping the fryer reach operating temperature quickly and use energy efficiently. The mechanical valve and safety thermocouple provide consistent heat output, allowing the fryer to recover temperature rapidly even after adding a large batch of food.
The fryer features AISI 304 stainless steel doors with magnetic closure, providing secure access to internal components. Adjustable stainless steel legs allow the unit to be levelled on uneven work surfaces, ensuring stability during operation. The 800 mm width, 900 mm depth, and 850 mm height make it suitable for most professional kitchens, while the 38.0 kW gas power rating ensures it can handle high-volume frying.
Cleaning the fryer involves draining the oil through the chromed brass tap into the stainless steel receptacle, where it is filtered for reuse. The wide bottom zone of the tank collects food debris, which can be flushed out after draining. The rounded edges of the tank and the external heat exchangers simplify scrubbing, while the stainless steel construction resists corrosion and staining. The adjustable legs and magnetic doors make it easy to access all parts of the unit for thorough maintenance.
