A gas pasta cooker boils water in two separate tanks, each heated by stainless steel elements submerged directly in the water. Steam rises from the boiling water and is drawn away by the integrated rear chimney, reducing humidity in the kitchen and keeping the workspace clear.
To operate the cooker, fill each 40 L tank with water to the marked level. Set the thermostat between 50 °C and 100 °C, depending on the pasta type and cooking time required. The warning light confirms the appliance is powered, and a second light indicates when the heating elements are active. Once the water reaches the set temperature, lower the pasta baskets into the tanks. The perforated shelf at the front catches overflow and starch, while the ball-valve drainage system allows quick water changes without lifting heavy containers. After cooking, lift the baskets onto the draining rack to remove excess water before serving.
The entire unit is constructed from AISI 304 stainless steel with a Scotch Brite finish, including the 2.0 mm worktop and adjustable legs. The cooking tanks are made from AISI 316 stainless steel, chosen for its resistance to salt and high temperatures, and feature rounded corners for easier cleaning. A double overflow and drainage area at the front directs water and starch into the stainless steel drainage line, which ends in a ball valve with an accessible lever for fast, controlled discharge.
The control panel houses the thermostat and two warning lights: one shows the appliance is switched on, the other confirms the heating elements are active. The 24.0 kW power rating reflects the load on the gas supply, requiring a dedicated line sized for commercial catering equipment.
