A lavastone gas grill heats food by direct radiant heat from a bed of natural stone or ceramic tiles that sit above gas burners. The stone absorbs the flame's energy and radiates it evenly across the cooking surface, eliminating hot spots and giving food the sear and flavour of a charcoal grill without the ash or the need to replenish fuel. The gas burner ignites instantly, reaches working temperature in minutes and holds that temperature precisely, so the chef can start service without delay and keep the heat steady throughout the shift. To use the CASTA Lady 900, the operator first slides the removable fat collection drawer into place beneath the front grease runner. The gas supply is turned on at the wall valve, then the grill's gas safety tap is opened. The piezoelectric ignition button is pressed to light the burner; the flame is visible through the grid and can be adjusted with the temperature knob between minimum and maximum settings. Food is placed directly on the stainless-steel grid or, for delicate items such as fish, on the optional steel-rod cooking grid. As the food cooks, fat and juices drip onto the V-shaped grid bars and run down into the grease runner, where they flow through a drain hole into the collection drawer. After service, the drawer is removed and emptied, and the runner and grid are wiped clean. The entire unit is constructed from AISI 304 stainless steel finished in a scotch-brite satin polish. The top surface is rounded and 2.0 mm thick, with a rear flue chimney that carries combustion gases away from the work area. The high-efficiency burner has three flame tubes that distribute heat evenly beneath the lavastone bed. A thermocouple monitors the flame and cuts the gas supply if the flame fails, while cool-grip handles and knobs made of heat-resistant material allow safe adjustment during operation. Four legs raise the grill to bench height, so it can be placed on a worktop or island without additional stands. The 11.0 kW gas input requires a dedicated commercial gas line capable of supplying the full load continuously. The 400 mm depth, 900 mm width and 270 mm height give a compact footprint that fits standard kitchen worktops while providing a generous cooking area for grilling steaks, burgers, fish and vegetables. The weight of the unit, though not specified, is typical for a stainless-steel grill of this size and is moved with a trolley or two-person lift. The seamless stainless-steel surface and sloped fat channels let kitchen staff wipe away grease and residue without disassembly after each service. The stainless-steel surfaces are wiped down with a damp cloth and mild detergent after each service. The grease runner and collection drawer are removed, emptied and washed separately. The cooking grid is lifted out and scrubbed to remove carbonised residue, while the lavastone bed is brushed to clear any food debris. The rear flue chimney should be inspected periodically for blockages to ensure proper ventilation. The CASTA Lady 900 is supplied as a bench-model grill. An optional steel-rod cooking grid for fish is available on request. The unit is certified to EC standards for commercial catering equipment.
