| NOTES | 5 Lava rocks |
A lava rock grill uses natural volcanic stones that are heated by a gas burner. The stones retain and evenly distribute heat, similar to charcoal. This simulates the operation of an open flame grill. The lava rock grill provides a more authentic grilling flavor, as the stones mimic the heat of coals. When fat drips onto the hot stones, a light smoke is produced, giving the food a smoky, aromatic taste—similar to traditional outdoor grilling.
A gas griddle that uses lava rocks to spread intense, even heat across a ribbed cooking surface transforms raw ingredients into seared, charred or gently cooked dishes without the hot spots of a bare metal plate. The rocks absorb the flame from the burners, radiate the heat upwards and soften the direct gas contact, so the temperature stays steady across every rib of the grid. Fat and juices drip into the V-shaped channels between the ribs, run down to an integrated grease channel and collect in a removable drawer, keeping the cooking zone clean and reducing flare-ups.
The sequence begins by placing five lava rocks in the burner tray beneath the grid. The gas tap is opened, the piezoelectric ignition clicked and the flame adjusted with the min/max control knob until the rocks glow. Once the grid reaches the set temperature, food is laid directly on the ribbed surface. The operator watches the sear, turns or moves items as needed and uses the adjustable legs to level the unit on uneven floors. After service, the grid is scraped, the grease drawer emptied and the rocks left to cool before the next session.
Construction is AISI 304 18/10 stainless steel throughout, finished with a Scotch Brite satin polish for corrosion resistance and easy wipe-down. The rounded top edge removes sharp corners, and the control knobs are heat-resistant with Cool-touch technology to prevent burns during long shifts. A gas safety tap and thermocouple shut off the supply if the flame fails, while dual flame tubes distribute heat evenly across the 400 mm depth and 700 mm width of the cooking surface.
The 8 kW power rating means the unit requires a dedicated gas line capable of supplying the full load without pressure drop. The 400x700 mm footprint fits on most worktops or can be placed on a stand with the neutral cabinet below, giving 850 mm overall height for comfortable reach. The weight of the stainless steel and lava rocks calls for a sturdy counter or floor base, and the adjustable legs allow the unit to be levelled on any surface.
Cleaning follows the parts named: the ribbed grid is scraped after each use, the grease channel and drawer are emptied and wiped, and the lava rocks are brushed free of carbon. The stainless steel exterior is washed with mild detergent and dried to prevent water marks. A fish-cooking grid can be ordered separately to extend the menu.
The L7/BS1BA is a single-chamber gas griddle with neutral cabinet, certified to current EC standards for professional catering equipment.
