Gas burners heat the pan base instantly, without waiting for a metal plate or ceramic sheet to warm. The open flame transfers energy straight to the food, letting the chef adjust the intensity from a gentle simmer to a rolling boil in seconds. This method keeps the cooking surface itself cool, so spills do not bake on and cleaning stays simple. To use the hob, the operator first checks that the gas supply valve is open. Each burner is lit manually with a match or piezo lighter; the pilot flame remains hidden beneath the cast-iron grates. Once lit, the flame is visible through the open burner design, allowing constant visual monitoring. The chef places the pan on the porcelain-enamelled cast-iron grate, which conducts heat evenly and resists warping under high temperatures. A recessed trough around the hob catches any overflow, preventing liquids from reaching the floor or the worktop below.
