A gas-powered wok cooking station built for continuous high-output stir-frying and delicate wok work. The stove burns gas through atmospheric burners that mix fuel and air at the point of ignition, producing an open flame whose height and shape the chef controls by adjusting the gas valve. This direct flame transfers heat instantly to the wok base, allowing rapid temperature changes and even distribution across the curved surface. The method gives the searing heat needed for stir-frying while still permitting gentle simmering for sauces and braises.
The chef places a wok on one of the interchangeable burner rings, selects the gas setting, and ignites the flame. Power levels range from a low simmer to a fierce blast, so the same station can sear a quick stir-fry or hold a long braise. Each ring size matches a different wok diameter, letting the kitchen equip the stove with the cookware it already owns. Once the wok is hot, ingredients are added in batches, tossed continuously, and removed when done. Removable drip pans catch any overflow and are lifted out for cleaning between services.
The entire unit is constructed from 18/10 AISI 304 stainless steel, including a 2.5 mm thick cooking top reinforced with welded steel pipes. This gives the work surface the rigidity to support heavy woks and repeated impact without warping. The stainless steel resists corrosion from water, steam and acidic sauces, and its smooth surface wipes clean quickly. The stove measures 1000 mm across the worktop, providing space for multiple woks or side-by-side stations, while the 600 mm depth fits neatly into a standard kitchen line. At 74 kg the unit is heavy enough to stay stable during vigorous stirring but can still be moved with a pallet truck or trolley.
Gas is supplied through a standard catering connection, and the burners are lit with a manual spark igniter. Each burner has its own control knob, allowing independent heat settings. The drip pans slide out without tools, and the cooking top can be lifted for access to the burner assembly. Regular cleaning involves wiping the stainless steel surfaces, emptying and washing the drip pans, and brushing any food debris from the burner ports to keep the flame even and efficient.
The stove is available with six burner configurations, each offering a different maximum power and wok ring diameter. These variants let the kitchen choose the balance of speed and precision it needs, from a small ring for delicate sauces to a large one for high-volume stir-frying. The unit is designed for integration into a larger gas cooking suite or as a standalone wok station in restaurants, takeaways and banquet kitchens.
