The stove channels gas through atmospheric burners, which create an open flame that directly heats the wok. This method delivers intense, even heat across the curved surface, allowing quick searing and tossing of ingredients without losing heat when food is added. The flame's height and intensity can be adjusted instantly, giving the chef control over everything from fast stir-fries to slow simmering sauces.
The operator places the wok onto the chosen ring, ignites the burner and sets the gas flow to the required level. Each ring size corresponds to a different burner output, so the same stove can handle a small sauté pan or a large wok without wasting fuel. Once the wok reaches temperature, ingredients are added, stirred and flipped continuously to ensure even cooking. The open flame responds immediately to changes in gas flow, so adjustments take effect within seconds. After cooking, the wok is removed and the burner turned off, leaving the worktop clear for the next task.
The stove is built from 18/10 AISI 304 stainless steel throughout, including a 2.5 mm thick cooking top reinforced with welded pipes for rigidity. Removable drip pans sit beneath the burners to catch spills and grease, reducing the risk of flare-ups and making daily cleaning straightforward. The entire unit stands on a sturdy frame that supports the weight of heavy woks and repeated use without warping.
Controls consist of individual gas valves for each burner, allowing precise flame adjustment. The range of burner outputs—from 3.0 kW to 21.0 kW—lets the stove tackle everything from gentle simmering to high-speed stir-frying, while the different ring diameters accommodate various wok sizes, making the stove adaptable to different menus and kitchen workflows.
A footprint of 600 by 500 mm fits neatly into most professional worktops, leaving space for adjacent hobs or prep areas. The 46 kg weight ensures stability during vigorous cooking but still allows the unit to be moved with a trolley when the kitchen layout changes. The stainless steel construction resists corrosion and staining, so the stove maintains its appearance and hygiene standards even after years of use.
Cleaning involves removing the drip pans, wiping down the worktop and burners, and scrubbing any food residue from the rings. The smooth stainless steel surfaces prevent food from sticking, so daily upkeep is quick and straightforward.
