Gas WOK Cooker
Burners: 1
A gas-fired wok stove delivers intense, direct heat to a rounded cooking surface, creating the high temperatures and rapid temperature shifts essential for stir-frying. The atmospheric burners beneath the wok ring produce an open flame that heats the metal quickly and evenly, while the operator's manual control of gas flow allows instant adjustment from a fierce sear to a gentle simmer. This method transfers heat efficiently, minimising energy waste and keeping the kitchen cooler than electric alternatives.
The sequence begins by placing the wok on the chosen ring and igniting the burner. Once the ring glows, the operator adds oil, then ingredients in stages, stirring constantly to prevent sticking and to ensure even cooking. The removable drip pans catch any overflow, keeping the worktop clean during service. After cooking, the pans are lifted out for washing, and the stainless steel surface can be wiped down without disassembly.
Construction is a single 2.5 mm thick stainless steel AISI 304 18/10 top, reinforced with welded pipes for rigidity. The entire unit is built from the same corrosion-resistant alloy, so it withstands daily exposure to moisture, heat and cleaning chemicals without pitting or staining. Removable drip pans sit beneath each burner, collecting spills and splashes that would otherwise carbonise on the metal.
Controls consist of gas valves for each burner, allowing independent adjustment of flame size. The operator selects the appropriate ring diameter and power level—from 3.0 kW to 21.0 kW—to match the wok size and the dish being prepared. Lower settings provide gentle heat for sauces and delicate ingredients, while the highest output sears meats and flash-fries vegetables in seconds.
A footprint of 600 mm by 600 mm fits standard worktop layouts, while a height of 275 mm keeps the cooking surface at a comfortable working level. The 38 kg weight ensures stability during vigorous stir-frying, yet the unit remains light enough to reposition when the kitchen is reorganised.
Cleaning is straightforward: after service, the drip pans are removed and washed separately, while the stainless steel top and frame are wiped with a damp cloth and a mild detergent. The corrosion-resistant alloy does not require protective coatings, so the surface can be scrubbed without risk of damage.
The stove is available with six burner configurations—C, T, S, G, M and P—each offering a different power output and ring diameter to suit various wok sizes and cooking styles. This flexibility allows the same unit to handle high-speed stir-frying, slow simmering and everything in between.
Designed for professional kitchens, the CASTA wok stove is catalogued under gas cooking equipment for Asian cuisine and high-volume food service.
