A refrigerated plate cools to -38 °C rapidly, transforming liquid mixtures into solid ice cream, sorbet or granita without needing a traditional freezer. The plate's quick heat removal preserves smooth textures and vibrant flavours, while the low temperature enables instant shaping into rolls, curls or decorative forms. The horizontal surface lets the operator pour, spread and shape the mix directly on the chilled plate, offering full control over thickness and presentation. Beyond desserts, the same plate can chill cocktails, set chocolate garnishes or flash-freeze savoury items like fish tartare, broadening its use in professional kitchens.
The unit is fitted with wheels, making it easy to move from prep areas to service counters or outdoor stalls. An internal compressor circulates refrigerant through the plate, keeping the temperature steady even in warm environments. The operator pours the mix onto the plate, spreads it thinly with a spatula, and waits for it to set. Once firm, the mix is scraped into rolls or lifted as a sheet, plated and served. For high-volume service, the plate can be wiped clean and re-chilled quickly, ready for the next batch.
Built entirely from AISI 304 stainless steel, the machine resists corrosion and simplifies cleaning. The external dimensions are 800 mm wide, 750 mm deep and 930 mm high, with an internal working surface of 680 mm by 560 mm. A digital control panel on the front adjusts the plate temperature between 0 °C and -38 °C, allowing seamless transitions between delicate sorbets and firm ice-cream rolls. A pre-set start sequence helps the plate reach and maintain the desired temperature efficiently.
With a 1.23 kW power rating, the unit connects to standard commercial kitchen circuits. The 230 V, 50/60 Hz voltage matches the mains supply in the UK and Europe. The compressor is built to perform reliably in warm conditions.
Cleaning is simple: the stainless-steel plate can be wiped with a damp cloth and sanitiser after each use, while the housing and control panel are cleaned with mild detergent. The wheels allow the unit to be moved to a wash-down area for thorough cleaning at the end of service. Routine maintenance requires no disassembly.
