A wall-mounted gas cooking range built for high-output wok work, the CASTA CC/03 BA850H delivers intense, even heat through vertical-flame burners. The flame rises directly against the curved base of the wok, transferring heat quickly and uniformly so that ingredients cook through without scorching or uneven spots. This method keeps the wok at a steady high temperature, essential for stir-frying, searing and flash-frying typical of oriental dishes.
The operator selects a burner from the available cast-iron atmospheric models—each sized for a different wok diameter—and ignites it with the pilot flame. The built-in thermocouple and gas-safety valve cut the supply instantly if the flame fails, preventing unburnt gas from accumulating. Once the burner is lit, the wok support ring is placed over it, centring the wok above the flame. The round cast-iron grid can be fitted instead when a flat-bottomed pan is needed. Drip-pans beneath each burner catch spills and are removed for cleaning.
The entire structure is fabricated from AISI 304 18/10 stainless steel, including the 2.5 mm reinforced cooking top that resists warping under repeated high heat. Adjustable legs level the unit on uneven floors. Burners, support rings and grids lift off for thorough cleaning, while the flat stainless top can be wiped down between services.
A footprint of 1500 × 500 mm suits most professional kitchens, and the 850 mm height places the cooking surface at a comfortable working level. The unit is wall-mounted to free floor space and keep the heat source close to the chef. Every installation is customised: the client chooses the number and size of burners, their spacing, and the overall width to match the menu and kitchen layout.
Cleaning involves removing the drip-pans, lifting off the burners, rings and grids, then washing them separately. The stainless steel top and body are wiped with a damp cloth and mild detergent; abrasives are avoided to preserve the finish. Regular inspection of the pilot flame and thermocouple ensures the safety valve remains responsive.
The range is CE certified and supplied as a bespoke build only, with no standard configuration.
