A gas-powered wok cooking range built for the intense heat and rapid searing that define oriental cuisine. The vertical flame from the high-performance burners envelops the curved wok, transferring heat evenly across the entire surface. This method eliminates cold spots and accelerates cooking, letting the chef work at the high temperatures stir-frying and flash-frying demand.
The sequence begins by selecting the burner size—9.5, 14 or 21 kW—each fitted with a safety valve tap, pilot flame and thermocouple. The wok support ring, shaped to cradle the pan, is lowered onto the burner, and the gas is lit. Once the flame stabilises, the wok is placed on the ring and the ingredients are added. The operator monitors the heat via the visible pilot and adjusts the tap to maintain the required intensity. After cooking, the wok and ring are removed, and the drip-pan beneath the burner catches any residue for quick disposal.
Construction centres on a 2.5 mm thick, flat stainless-steel cooking top reinforced for durability. The entire structure is fabricated from AISI 304 18/10 stainless steel, including the adjustable legs that level the unit on uneven floors. Removable cast-iron burners and drip-pans simplify cleaning; the burners lift out for scrubbing, while the drip-pans slide free for emptying and washing. Wok support rings and round grids are made of black-enamelled cast iron, chosen for its heat retention and resistance to warping.
Controls consist of gas safety valve taps for each burner, each incorporating a thermocouple that cuts the gas if the flame fails. The pilot flame remains visible for constant monitoring.
The 2000 mm width, 1000 mm depth and 850 mm height create a substantial footprint that anchors the range in a busy kitchen. The gas-powered design draws from the mains supply, avoiding the electrical load that would otherwise be needed for equivalent heat output. Adjustable legs allow the unit to be positioned flush against walls or integrated into existing worktop runs.
Cleaning involves removing the burners, drip-pans, wok rings and grids, then wiping down the stainless-steel surfaces with a damp cloth and mild detergent. The enamelled cast-iron parts are scrubbed separately to prevent cross-contamination of flavours.
Each unit is produced to order, allowing the client to specify the number and size of burners and the exact dimensions to fit the available space.
