A wok gas cooking stove built for high-output professional kitchens, where open-flame burners heat the curved base of a wok rapidly and evenly. The gas flame rises around the sides, concentrating heat at the bottom while allowing quick temperature adjustments. This direct heat transfer is essential for stir-frying, searing and flash-cooking at the volumes a commercial service demands. The stove's atmospheric burners draw in air naturally, eliminating the need for a fan or blower and reducing moving parts that could fail under continuous use.
The operator places a wok onto the chosen ring, ignites the burner and sets the gas flow to the required intensity. High-power burners bring the wok to temperature within seconds, while lower settings maintain a steady simmer for delicate sauces or slow reductions. Removable drip trays beneath each burner catch spills and grease, preventing flare-ups and keeping the worktop clean. A rear splashback rises 200 mm to shield the wall from splashes, steam and oil mist, reducing the daily cleaning load behind the unit.
The entire appliance is constructed from 2.5 mm thick AISI 304 18/10 stainless steel, a grade chosen for its resistance to corrosion, staining and high-temperature oxidation. Welded pipe supports under the cooking surface reinforce the structure, preventing warping or sagging even when multiple woks are in use simultaneously. The legs and body are also stainless steel, ensuring the unit can be moved with a pallet truck or trolley without risk of rust or structural fatigue.
Controls are limited to the gas valves for each burner, allowing direct manual adjustment of flame size and heat output. The range of burner powers—from 3.0 kW to 21.0 kW—lets the chef match the heat to the dish: a small ring for a single portion, a large one for a family-sized stir-fry or a high-output burner for boiling water or deep-frying in a wok.
The footprint of 1000 mm by 700 mm fits into a standard worktop run, while the 275 mm height keeps the cooking surface at a comfortable working level for standing operators. The 2.5 mm steel thickness adds weight, which in turn reduces vibration and movement during vigorous stir-frying, but the unit remains portable enough to be repositioned during kitchen reorganisation.
Daily cleaning involves removing the drip trays, wiping down the stainless steel surfaces with a damp cloth and mild detergent, and rinsing the trays under a tap. The smooth, non-porous steel resists staining and does not absorb odours, so the stove can be returned to service quickly. The rear splashback is wiped down to remove any accumulated grease or food debris, and the burners are brushed to clear any carbonised residue that could affect flame quality.
A 600 mm wide version of the same model is available, allowing the stove to be matched to the space and output requirements of the kitchen.
