Gas WOK Cooker
Burners: 3
A gas-powered wok cooking stove built for high-output kitchens, where direct flame contact and rapid temperature shifts are essential. The unit channels gas through atmospheric burners positioned beneath the worktop, creating an open flame that heats the wok ring evenly across its surface. This method transfers heat instantly to the cookware, allowing chefs to sear, stir-fry or flash-fry at the speed the menu demands. The flame's intensity can be adjusted on the fly, so the same burner handles a quick char on vegetables or a sustained boil for stocks and sauces without switching equipment.
To begin, the operator selects a wok ring diameter matched to the cookware and sets the corresponding burner type for the required power level. The gas supply is opened, the burner ignited, and the flame adjusted to the desired height. Cookware is placed on the ring, and ingredients are added in stages, stirred or tossed as the heat dictates. Once cooking is complete, the flame is turned off, the cookware removed, and the worktop wiped down while still warm to prevent residue from hardening.
The entire unit is constructed from 2.5 mm thick AISI 304 18/10 stainless steel, chosen for its resistance to corrosion and staining under constant exposure to heat, moisture and acidic ingredients. The cooking surface is reinforced with welded pipe supports beneath, preventing flex or warping even when fully loaded. Removable drip trays sit below each burner, catching spills and splatter for quick removal and cleaning. A 200 mm high rear splashback protects the wall behind the stove from grease and liquids, reducing the need for frequent repainting or tiling maintenance.
Controls are limited to the gas valve for each burner, which sets the flame height and thus the cooking temperature. The choice of burner type—ranging from 3.0 kW to 21.0 kW—determines the maximum heat output available, allowing the stove to handle everything from gentle simmering to high-heat wok frying. The 1500 mm width provides space for multiple burners to operate simultaneously, so a single unit can support a full wok station without crowding.
The dimensions of 1500 mm by 700 mm by 275 mm define the footprint on the kitchen floor, requiring a dedicated section of the worktop line. The 275 mm height is set to match standard worktop levels, ensuring the cooking surface aligns with adjacent equipment for seamless workflow. The stainless steel construction adds weight, which keeps the unit stable during vigorous stirring but may require two people to move during installation or repositioning.
Daily cleaning involves removing the drip trays, emptying any collected liquids, and wiping them with a damp cloth. The cooking surface and splashback are cleaned with a non-abrasive stainless steel cleaner to avoid scratching the finish. The burners themselves should be brushed free of food debris after each service to prevent clogging and ensure even flame distribution.
A 1500 mm by 600 mm by 275 mm variant is also available, offering a narrower profile for kitchens where space is constrained while retaining the same burner options and construction standards.
This model is categorised under professional gas cooking equipment, positioned for high-volume Asian cuisine, street-food operations and open-kitchen concepts where wok cooking is a central feature.
