Gas WOK Cooker
Burners: 1
A gas-powered wok cooking station built into a neutral-height cabinet, designed for high-output frying and stir-frying in professional kitchens. The unit combines a heavy-duty stainless-steel hob with a choice of atmospheric burners, allowing chefs to match flame intensity to the dish—from rapid searing to gentle simmering.
Gas burners draw primary air from the kitchen atmosphere and mix it with fuel at the nozzle, producing a visible blue flame that transfers heat directly to the wok base. The flame's shape and height are controlled by the gas valve, giving immediate response when the operator adjusts the setting. Because the heat source is beneath the pan, the wok's curved sides reflect and concentrate the energy, creating a hot zone at the bottom while cooler zones rise towards the rim. This temperature gradient lets the chef move ingredients across the surface to control doneness without removing the pan from the heat.
To begin cooking, the operator selects a burner type and WOK ring diameter from the available options, then places the wok on the ring. The gas valve is opened and the flame lit; the valve is then adjusted to the desired intensity. Once the wok reaches temperature, ingredients are added and stirred or tossed as needed. A built-in water tap on the worktop allows the chef to add liquid directly to the pan or to rinse tools without leaving the station. After cooking, the automatic cleaning mechanism is activated: a spray system wets the surface, loosens residue, and flushes it away, reducing manual scrubbing.
The cooking surface is constructed from AISI 304 18/10 stainless steel, 2.5 mm thick, chosen for its resistance to corrosion, mechanical impact and high temperatures. The steel is welded to a reinforcing pipe frame that runs beneath the worktop, preventing flex under the weight of filled woks. A 200 mm rear splashback shields the wall from grease and steam, while the neutral-height cabinet below provides storage or workspace at a comfortable height for the operator.
Controls are limited to the gas valves for each burner; each valve sets the flame height and thus the heat output. The water tap is operated by a separate lever mounted on the worktop.
The 600 mm depth and 700 mm width of the worktop give enough room for a wok, utensils and ingredients without crowding. The 850 mm overall height places the hob at a standard worktop level, matching adjacent equipment and allowing seamless movement across the kitchen. The gas-powered design means the unit can be installed wherever a gas supply is available, without requiring electrical circuits or additional ventilation beyond the kitchen's existing system.
Cleaning is simplified by the automatic spray mechanism, which can be run after each service. The stainless-steel surface and splashback can be wiped down with standard kitchen detergents; the welded construction leaves no crevices where food debris can lodge. The water tap should be checked periodically for scale build-up, especially in hard-water areas.
The unit is offered with a choice of burner types—C, T, S, G, M or P—each delivering a different maximum power output. WOK rings of various diameters are also available, allowing the operator to match the ring size to the wok being used.
