The CASTA wok gaz cooking CC/02 is a gas-powered wok cooking appliance designed for professional kitchens.
This unit operates using atmospheric burners, which draw in air to mix with the gas before combustion. This method provides direct heat to the wok, allowing for rapid cooking and precise temperature control essential for techniques like stir-frying. The appliance is configured as an open stand model, meaning it does not have a supporting cupboard beneath the cooking surface.
The cooking process involves placing a wok onto the burner. The high heat output from the gas burner quickly heats the wok and its contents. The design facilitates easy access for the chef to manoeuvre the wok and ingredients.
The construction features a cooking top made from 2.5 mm thick stainless steel AISI 304 18/10, reinforced with welded pipes for durability. The overall structure is also entirely stainless steel AISI 304 18/10, ensuring longevity and ease of cleaning. A 200 mm splashback is integrated to protect surrounding areas. The unit includes an Encore pillar faucet and removable drip pans for convenient waste management. Adjustable feet, also in stainless steel AISI 304 18/10, allow for levelling on uneven surfaces. The lower cooking top incorporates a 150 mm drainage with a removable wirenet basket.
The appliance has a total power output of 19 kW. It is equipped with atmospheric burners offering various outputs: C 9.5 kW, T 14.0 kW, S 21.0 kW, P 3.0 kW, M 4.5 kW, and G 7.5 kW. An optional pre-mixing radiant infra-red burner "B" with a 23.0 kW output is available.
The dimensions of the unit are 1100 mm in length, 600 mm in width, and 850 mm in height.
Cleaning is facilitated by the removable drip pans and the stainless steel construction, which can be wiped down. The wirenet basket is also removable.
