Professional electric boiling kettle with a cylindrical cooking tank, indirect heating and autoclave function, designed for preparing large quantities of food. The cylindrical construction with rounded surfaces facilitates cleaning. The autoclave version features a hermetically sealed lid that allows cooking under increased pressure. The increased pressure enables higher cooking temperatures to be reached, significantly reducing cooking time. Indirect electric heating means that the electric heating elements heat the water inside the double wall, generating steam that evenly transfers heat to the cooking tank, ensuring gentle heating of the products and reducing the risk of burning.
This professional boiling kettle uses indirect steam heating under pressure to cook food evenly. Electric elements heat water in a surrounding jacket, creating steam that transfers heat to the inner cooking vessel. This method prevents hot spots and allows precise temperature control during cooking.
The operator adds ingredients to the inner tank, seals the lid with locking clamps, and starts the heating process. Steam builds pressure between the double walls, raising the cooking temperature. A pressure gauge monitors jacket pressure, while a manual air release valve allows adjustments. After cooking, pressure is released, the lid unlocked, and contents drained through an insulated discharge tap.
The cylindrical cooking tank is made of AISI 316 stainless steel, offering high resistance to acidic foods. The outer jacket and supporting frame use AISI 304 stainless steel, with a satin finish on external surfaces. The lid, also stainless steel, features counterbalanced springs and a heat-resistant handle for easy operation.
Powered by 24 kW electric elements made of Incoloy alloy, the kettle operates on a 400 V three-phase supply. Heating intensity can be adjusted, and a safety thermostat prevents overheating. Water levels in the jacket are maintained between minimum and maximum marks, with an automatic refill function available.
The unit stands on adjustable stainless steel legs for levelling on uneven floors. High-density insulation reduces heat loss, keeping the exterior cool. The unit weighs 150 kg and requires a fixed position near a suitable power outlet and drainage point.
Cleaning involves draining jacket water, rinsing the inner tank, and wiping stainless steel surfaces. The discharge tap and lid gasket should be inspected regularly. The cylindrical shape and smooth welds simplify scrubbing and sanitising.
This autoclave version features a pressure-tight seal and safety valve for controlled steam cooking, suitable for professional catering environments.
