This rectangular Gastronorm boiling kettle from FAGOR is built for professional kitchens, using indirect heating via a water jacket around the inner container. Heat is transferred evenly without direct contact between the heating elements and food, reducing the chance of burning. Incoloy electric elements warm the water in the jacket, providing steady, controlled heat to the inner chamber where liquids like soups or sauces are prepared.
The kettle is filled through the top opening, with the lid securely closed during operation. Heating intensity is adjusted via the control panel, while the water jacket maintains its level automatically, with an optional refill feature for extended use. A safety thermostat cuts power if water levels drop too low or temperatures exceed safe limits. Once cooking is complete, the contents are drained through the front tap, which is insulated for operator safety and designed for smooth flow. The counterbalanced lid, fitted with springs, stays in place during cooking but lifts easily when needed. A pressure gauge and manual air release valve on the jacket monitor and regulate internal pressure for safe operation.
The MGNIE-180 is constructed from stainless steel, with the base made from AISI 316 grade for enhanced corrosion resistance in humid environments.
