Professional steam boiling kettle with a rectangular Gastronorm cooking tank and indirect heating, designed for preparing large quantities of food. Indirect steam heating means that steam from the user’s external steam connection is gradually introduced through an adjustable valve into the double wall of the tank, ensuring gentle heating of the products and reducing the risk of burning.
This rectangular Gastronorm steam boiling kettle is built for professional kitchens, using indirect steam to heat liquids. Steam from an external source circulates through a double-walled jacket, warming the inner vessel evenly without direct contact or risk of burning. The design ensures consistent temperatures and efficient energy use, making it suitable for bulk food preparation in commercial settings.
To use, attach the kettle to an external steam supply. Slowly open the inlet valve to fill the jacket with steam, watching the built-in pressure gauge. A safety valve automatically releases excess pressure at 0.5 bar, while a manual vent lets you reduce pressure during heating. Once the kettle reaches the right temperature, add ingredients through the hinged lid. The lid is balanced for easy handling, with a heat-resistant grip and insulated cover. While stirring may be needed for some recipes, the even heat distribution often makes it unnecessary. When cooking is done, empty the kettle through the front tap, which has an insulated, heat-resistant handle for safe and controlled draining.
The inner vessel is made from AISI 316 stainless steel, known for its durability and resistance to corrosion in high-moisture environments. The side walls and lid use AISI 304 stainless steel, while the outer casing has a satin finish for a professional look. High-density insulation between the walls reduces heat loss, improving energy efficiency. The sturdy frame, also stainless steel, includes adjustable legs to level the kettle on uneven floors.
Key controls include a pressure gauge to monitor steam in the jacket, a manual vent to release excess pressure, and a safety valve set to 0.5 bar. The front tap supplies both hot and cold water, allowing adjustments to water levels or rinsing without extra equipment.
With a 180-litre capacity, this kettle handles large batches of liquids. Its 1000 x 900 x 850 mm dimensions fit standard Gastronorm setups, ensuring compatibility with professional kitchen layouts. The 180 kg weight indicates a robust, fixed installation, requiring a stable surface and adequate space for safe operation.
Cleaning is straightforward: drain the kettle fully through the front tap, then rinse with hot water. The smooth, seamless interior of AISI 316 stainless steel resists stains and makes residue easy to remove. Regular checks of the lid, tap, and steam inlet valve help prevent blockages, while the safety valve and pressure gauge should be inspected to maintain accurate pressure control.
This model relies on indirect steam heating and must be connected to an external steam supply. It works with standard Gastronorm accessories, fitting seamlessly into professional kitchens where bulk liquid preparation is essential.
