| NOTES | The surface of the cutting board must be moistened before using the scraper |
Hasegawa's cutting board scraper is essential for the hygienic daily maintenance of cutting boards. Its abrasive side is perfect for removing stains, yellowing, roughness and thickening by scraping, it also polishes the surface of the board.
A cutting board scraper removes food debris and restores the surface of a damp board without chemicals. The tool slides across the moistened worktop, lifting residue with its abrasive layer while smoothing minor scratches. This action prevents bacterial build-up in cuts and keeps the board ready for the next task.
Before use, the cutting board is lightly wetted. The scraper is drawn firmly across the surface in overlapping strokes, working from one end to the other. The first pass collects waste; subsequent passes polish the board until it feels even under the hand. The double-sided design allows the operator to switch edges when one side wears.
The scraper is shaped to fit comfortably in the hand and sized to cover the width of standard professional cutting boards in a few passes. Its abrasive layer is bonded to a rigid base that resists bending under pressure, ensuring consistent contact across the entire surface.
Measuring 150 mm long, 50 mm wide and 30 mm high, the scraper is compact enough to store in a utensil drawer or hang on a rail above the worktop. The dimensions also indicate the area it can treat in a single stroke, reducing the time spent on each board.
Cleaning follows from the materials: the rigid base is wiped with a damp cloth to remove food particles, while the abrasive layer is rinsed under running water and left to air-dry. No detergents are required, as the abrasive surface does not trap grease.
This scraper is designed for Hasegawa and HENDI cutting boards that meet HACCP hygiene standards, ensuring compatibility with boards already in use in professional kitchens.
The product is listed under kitchen hygiene and cutting-board maintenance in the professional catering catalogue.
