Instead of a burner or element exposed to the air, a concealed resistance wire heats a flat metal plate. The plate's large area spreads the heat evenly, so every part of the container receives the same temperature. The insulated base beneath the plate prevents heat loss downward, concentrating all the energy on the container above.
Place the heating surface on a stable worktop. Plug it into a 230 V circuit. Set the gastronorm container on the plate; the unit starts heating automatically. A thermostat maintains the temperature up to 95 °C, so the operator can leave the container in place for service without constant attention. When the container is removed, the surface cools quickly, ready for the next use.
